Granola is delicious served with yogurt or milk and can be used as a crunchy topping on oatmeal. Mix and match dried fruits, nuts and spices to your taste! It keeps well in a glass jar in the cupboard or in the freezer.
4 cups rolled oats (not quick cooking)
1 cup sliced raw almonds, walnuts or other favorite nut
1 cup raw sunflower seeds 1/3 cup veggie oil (sunflower, coconut, or canola)
1/3 – 1/2 cup brown sugar or honey
1 T Cinnamon
Preheat oven to 350 degrees. Place oats, nuts, seeds, oil, sugar, and spices in a large bowl mixing well to coat. Take this mixture and spread it evenly on a large cookie sheet. Bake for 10-12 minutes. Remove from oven and stir and toss lightly on the cookie sheet and bake another 10-12 minutes until golden brown.
Once granola has cooled, add 1 cup chopped dried fruit such as raisins, cranberries, crystalized ginger, apricots, etc. Be sure to add fruit AFTER granola has cooled or it will become hard.
